Easy Carrot Cake

Super easy recipe


  • Dry
    All purpose flour -195 g (1 1/2 cup)

  • Baking soda- 1 tsp 
    Baking powder- 1 tsp
    Salt- 1/2 tsp
    Ground nutmeg – 1/2 tsp
    Ground cinnamon- 2tsp

  • Wet
    Grated carrots – 270 g (3 cup)
    Sugar -100 g (1/2 cup)
    Brown sugar -80 g (1/2 cup)
    Oil – 250 ml (1 cup)
    Vanilla extract- 2tsp
    Chopped walnuts-60 gr (1/2 cup)

  • Cream Cheese Glaze
    Cream cheese -170 g (6 oz)
    Powdered sugar -60 g (1/2cup)
    Lemon juice- 1 tbsp
    Milk , as needed


  • Place all the dry ingredients into a bowl, mix well. and put aside.
  • Put all the wet ingredients into another bowl, except for carrot and walnuts. Whisk until everything is well combined. Then add in dry ingredients and mix well. Now add in carrot and walnuts. Fold everything together using a spatula.
  • Place batter into a 25 cm buttered and floured pan. Bake in a preheated oven at 160ºC for 50 minutes.
    Remove from the oven and set aside for 5 minutes before flipping the cake on a rack. Cool completely.
  • Whisk cream cheese in a bowl until fluffy. Then pour powdered sugar, lemon juice and whisk everything together. Pour milk little by little until you get your desired consistency. Pour it on the cake (better the next day) and enjoy.
