Gingerbread Pancakes

Pancakes with a hint of molasses, ginger and cinnamon.


  • Unbleached Baking Mix-3 cup(s)

  • Ground ginger-2 Tsp

  • Kosher salt-1/2 Tsp

  • Ground cinnamon-1 1/2 Tsp

  • Sugar-1 cup(s)

  • Molasses-1/4 cup(s)

  • Salted butter, melted-4 Tbsp

  • Eggs-3

  • Vanilla extract-2 Tsp

  • Buttermilk-2 cup(s)


  • Combine baking mix, ginger, kosher salt, cinnamon and sugar in a large bowl and set aside.
  • In a small bowl, whisk together molasses, melted butter, eggs, vanilla extract and buttermilk. Combine wet ingredients into dry and mix until just combined.
  • Set batter aside and preheat a large pan over medium-high heat.
  • When pan is hot, using a 1/3 measuring cup, scoop a heaping portion of batter into pan. Cook about 1 minute or until pancake starts to bubble.
