Ingredients
Unbleached Baking Mix-3 cup(s)
Ground ginger-2 Tsp
Kosher salt-1/2 Tsp
Ground cinnamon-1 1/2 Tsp
Sugar-1 cup(s)
Molasses-1/4 cup(s)
Salted butter, melted-4 Tbsp
Eggs-3
Vanilla extract-2 Tsp
Buttermilk-2 cup(s)
Directions
- Combine baking mix, ginger, kosher salt, cinnamon and sugar in a large bowl and set aside.
- In a small bowl, whisk together molasses, melted butter, eggs, vanilla extract and buttermilk. Combine wet ingredients into dry and mix until just combined.
- Set batter aside and preheat a large pan over medium-high heat.
- When pan is hot, using a 1/3 measuring cup, scoop a heaping portion of batter into pan. Cook about 1 minute or until pancake starts to bubble.
