Mediterranean Chicken Bowl with Turmeric Dressing

Quinoa and chicken


  • Quinoa -8 4/5 Oz

  • Shallots, minced-1/3 cup(s)

  • Honey -1 Tsp

  • Ground turmeric-1 Tbsp

  • Coriander-1 Tbsp

  • Apple Cider Vinegar -1/3 cup(s)

  • Orange zest-1 1/2 Tsp

  • Extra virgin olive oil-1 cup(s)

  • Chicken, meat removed and shredded, and bones discarded-1

  • Cucumber-1

  • Tomato, diced-2 cup(s)

  • Crumbled feta cheese-4 Oz

  • Kalamata Olives with Herbs, drained and rinsed- 1/2 Oz


  • Cook quinoa according to package instructions, set aside to cool at room temperature.
  • Place in a blender place shallots, honey, turmeric, coriander, vinegar and orange zest together for dressing. Blend on high speed then slowly add oil. Season to taste and set dressing aside.
  • Combine quinoa, shredded chicken, cucumbers, tomato, feta cheese and olives in a large bowl. Season to taste.
  • Drizzle with dressing as desired, and garnish with red onions and feta.
