Egg-based Italian dish
Peeled potatoes 1 lb
Chopped yellow large onion 1
Olive Oil 1/4 cup
Shredded Cheddar or any cheese 1 cup
Smoked Paprika – 1/2 tsp
Chopped Parsley- 2 tbsp
Chopped Chives – 1 tbsp
Salt and Pepper
- Take a saucepan, add the potatoes and cover with water, bring to a boil, cook them for 5 minutes, pour out the water and allow the potatoes to cool and cut them into large cubes.
- In a pan, add the olive oil, onions and partially cooked potatoes, cook them over medium heat for about 15 – 20 minutes and flavor them with salt, pepper and paprika.
- Whisk your eggs with salt and pepper, add them to the potato mixture, stir the eggs around for a minute, cover the pan with a lid and cook until about ¾ part of the frittata is cooked through. In the meantime, preheat your broiler.
- Spread the cheese over the top, place the frittata under the broiler, cook until the top is a deep golden brown. Take out from the broiler, top with the parsley and serve.
