Cream soup with pumpkin
Ingredients
Onion, chopped-1
Olive Oil-1 Tbsp
Celery, chopped-2 Stalks
Carrot, peeled and chopped-1
Ground Sage-2 tsp
Fresh Thyme-1 tsp of
Pure Pumpkin Puree-2 cups
Chicken Stock-3 cups
Heavy Cream-¼ cup
Salt and Pepper
Directions
- Preheat the soup to medium heat and add the oil in it, put in the onions, carrots and celery and let them cook for 5 to 7 minutes.
- Put in the chicken stock, pumpkin puree, thyme and sage and let the mixture come to a boil, turn the heat to medium-low and let it simmer for 15 minutes
- Puree the soup in a blender.
- Add the cream, season with salt and pepper and cook for just 2 more minutes to warm up the cream.
