Shrimp Fajitas

Plump juicy shrimps, tender charred vegetables with an amazing fajita marinade.

Ingredients

  • Olive oil- 1/4 cup

  • Garlic minced-4 cloves 

  • Lime juice- 1 Tbsp

  • Cajun spice-1 Tbsp

  • Salt- 1/2 Tsp

  • Shrimp Fajita Ingredients:

  • Shrimp peeled, deveined-1 lb 

  • Bell peppers -2

  • Medium onion sliced-1/2

  •  Cilantro chopped-1/4 cup

  •  Lime juice-2-3 tsp

Directions

  • Combine marinade ingredients: 1/4 cup olive oil, 4 cloves garlic, minced, 1 Tbsp lime juice (from 1/2 lime), 1 Tbsp cajun spice, 1/2 tsp salt in a small bowl.
  • Place vegetables in a medium bowl slicing the bell peppers, and onions the same 1/3” thickness. Pour half of the marinade over the top then toss to combine.
  • Take a second medium bowl, pat dry shrimp with a paper towel, add remaining half of the marinade and stir to combine.
  • Take a big heavy pan heat over medium heat with 1/2 Tbsp oil and when hot, add shrimp in a single layer and saute 1-2 minutes per side or until cooked through and promptly transfer to a plate.
  • Add marinated vegetables into the same pan, and saute until soft and golden brown at the edges (10 min), stirring occasionally, then turn off the heat.
  • Place shrimp back to the pan along with 1/4 cup chopped cilantro. Squeeze fresh lime juice to taste over the mixture and toss to combine. Serve fajitas with warmed or toasted tortillas and jalapeno ranch.
