Padron peppers -20
Grated Manchego cheese-1/2 cup
Grated mozzarella-1/2 cup
Cream cheese-2 Tbsp
Roasted piquillo peppers-1/3 cup
- Take 1 padron pepper and slit it open on one side. Remove the seeds using the back of a small spoon. Do the same with the rest of them, put aside.
- Take a bowl, put in Manchego cheese, mozzarella, cream cheese, piquillo peppers, a few grind of black pepper, and mix everything.
- Stuff the peppers with the cheese filling. Put them on a baking tray. Bake in a preheated oven at 360ºF for 10 minutes.
