Stuffed Padron Peppers

Stuffed peppers filled with melting cheeses.


  • Padron peppers -20

  •  Grated Manchego cheese-1/2 cup

  • Grated mozzarella-1/2 cup

  • Cream cheese-2 Tbsp

  • Roasted piquillo peppers-1/3 cup


  • Take 1 padron pepper and slit it open on one side. Remove the seeds using the back of a small spoon. Do the same with the rest of them, put aside.
  • Take a bowl, put in Manchego cheese, mozzarella, cream cheese, piquillo peppers, a few grind of black pepper, and mix everything.
  • Stuff the peppers with the cheese filling. Put them on a baking tray. Bake in a preheated oven at 360ºF for 10 minutes.
