Zoodles with Peanut Sauce

Zucchini in a sauce


  • Smooth Peanut Butter- 1/2 cup

  • Low Sodium Soy Sauce-3 Tbsp

  • 1 Clove of Garlic

  • Grated Ginger-1 Tbsp

  • Red Chili Paste-1 Tsp

  • Rice Wine Vinegar-2 Tbsp

  • Hot Water-1/4 cup

  • Honey- 1Tbsp

  • Sesame Oil-2Tsp

  • For the Salad:

  • Zucchini (spiralized into noodles)-3

  • Scallions (chopped) -4

  • Roughly Chopped Peanuts-1/4 cup

  • Fresh Cilantro, roughly torn


  • Put all of the ingredients in a food processor to make the sauce and
    blend until smooth, set aside or store it in a tightly sealed container in the fridge until you’re ready to use it.
  • Toss the spiralized zucchini with some of the dressing in a bowl, then
    sprinkle with the nuts, scallions, and cilantro.
